Chicken Fried Spanish Rice

I absolutely love rice. I'm always trying to come up with an idea of how to spice it up and make something yummy and healthy. So, I came up with this little number.
You'll need:

1 box spanish rice
1 tbsp grape seed oil
1 can diced tomatoes
2 chicken breasts, cubed
1/4 large onion, diced
1/4 tsp black pepper
1/4 tsp garlic powder
1 can beans

Saute the chicken and onion in 1/2 tbsp oil. Add black pepper and garlic powder. Let simmer five minutes.

Add drained can of beans. Turn down on low and cover.

Fry rice in 1/2 tbsp oil. When vermicelli turns golden brown add two cups of water and the can of diced tomatoes. Bring to a boil, then turn down on low and let simmer for 20 minutes.

Rice should be tender. If not, recover and simmer another 5 minutes.

Drain the chicken and beans.

Add chicken and beans to the pan of rice and let simmer for about five minutes.

All done. It's very simple and delicious. Goes really well with cornbread or dinner rolls.
