It has been a really long time since I have been able to post a new recipe. We have had our hands completely full with Daniel's medical needs, but since everyone went to bed early last night, I jumped at the opportunity to make something.
I started seriously dieting a couple of weeks ago, and I've been feeling like I just don't get to eat as much as I want. Naturally, the perfect solution to this problem is to make a huge pot of cabbage soup. It's about 50 calories per bowl, so I can eat as much as I want all day. For those weight watchers members out there, this recipe has zero points!
You'll need the following:
1/2 c. diced carrots
1/2 c. diced onion
2 cloves minced garlic
32 oz. fat free beef broth
1 c. water
2-3 cups shredded cabbage
1/4 c. diced celery
1/4 c. diced mushrooms
1 small can tomato paste
1/2 green pepper
1/2 c. diced zucchini
1 c. green beans
basil, oregano, salt and pepper to taste
Spray the bottom of your pot with fat free cooking spray. Saute the carrots, onions, and garlic in the cooking spray for five minutes on medium heat. Add the remainder of the ingredients and simmer for one hour, or until veggies are at your desired tenderness. I prefer to make this a day ahead of time and refrigerate over night to let the flavors reach their full intensity.
There you have it. A delicious, low calorie soup. You can literally eat the entire pot if you want. I suggest making this as a before dinner filler, and pairing with a green salad to help curb your appetite. Enjoy!
